Culinary Significance
Essential for unlocking depth in doenjang (soybean paste) and gochugaru (chili flakes). Toasted sesame seeds develop 2-furfurylthiol (coffee-like aroma), while perilla seeds release limonene and pinene. Used to intensify the umami in roasted barley tea (boricha).
