During simmering, millet starch gelatinizes between 70–80 °C, swelling and releasing amylose and amylopectin, while proteins denature around 60–70 °C, contributing to mouthfeel. Salt at 0.5 % reduces water absorption, controlling viscosity, and a short fermentation step (12–24 h at 30–35 °C) breaks down phytic acid, improving digestibility.
