Agar‑agar, carrageenan, and alginate are high‑molecular‑weight polysaccharides that form thermally or ionically cross‑linked gels. Heating agar to 40–80 °C dissolves the polymer, and cooling below 20 °C allows the chains to recrystallize into a rigid network. Carrageenan gels at 30–35 °C through helix formation, while alginate cross‑links with Ca²⁺ ions to form a 3‑dimensional gel matrix. These transitions are governed by temperature, time, concentration, and ionic strength.
