During fermentation, lactic acid bacteria convert rice sugars into lactic acid, lowering the pH to 4.5–5.5 and promoting starch gelatinization. Coconut milk adds 10–15 % fat that coats the batter, reducing sticking and softening the crumb as proteins denature and coagulate during cooking. Precise thermal control (180–200 °C) crisps the edges while keeping the interior tender.
