During gelatinization, starch granules absorb water, swell, and lose crystalline order, forming a viscous gel. Upon cooling, amylose and amylopectin chains realign into crystalline structures (retrogradation), which increases firmness and reduces digestibility. Additives such as salts, sugars, and lipids modulate these transitions by affecting water activity and chain mobility.
