Technical
During steaming, the moisture in the steam penetrates the masa, raising the temperature to around 100 °C. At this temperature, starch granules absorb water, swell, and gelatinize, while proteins denature, creating a firm yet tender matrix. The process also helps inactivate microorganisms and preserve the tamale's structure.
