Technical
Tequesquite contains sodium carbonate (Na₂CO₃) and potassium carbonate (K₂CO₃) which react with acidic components (like fruit juices or fermented masa) to produce carbon dioxide (CO₂). The alkaline salts also modify protein structures in corn dough.
Culinary Significance
Creates air pockets in tamales and tortillas while enhancing maize flavor through nixtamalization-like effects.
