Sugars such as sucrose and glucose undergo dehydration, isomerization, and polymerization at 120–140 °C, forming caramel color compounds and flavor aldehydes. The limited oxygen exposure suppresses Maillard browning and oxidation of phenolics, yielding a smoother, less bitter profile.
