Wild fermentation uses naturally occurring lactic acid bacteria and yeasts to acidify and produce ethanol under ambient conditions.
Technical
During wild fermentation, Lactobacillus spp. convert sugars to lactic acid, lowering pH, while yeasts produce ethanol. The process generates aroma compounds such as diacetyl, ethyl acetate, and 2‑methylbutanal, which develop over 5–7 days at 20°C. Salt concentration of 2–3% selects for halotolerant LAB and suppresses spoilage bacteria.
