in a large bowl, combine the turkey, applesauce, hoisin and soy sauces, sesame oil, ginger, garlic, scallions and salt and pepper to taste. form the meat into 6 patties. (may be covered and refrigerated for up to 24 hours. ). lightly brush a grill pan or skillet with the sesame oil and place over medium-high heat. add the patties and fry until golden, about 4 minutes. turn and cook until the other side is golden and the turkey is cooked through, about 5 minutes. transfer to a bun. serve immediately.
