Preheat over to 375 degrees. Lightly grease a 9"-10" round lidded baking dish (at least 4" deep) or Dutch Oven. Combine flour, xantham gum, baking soda, cheese powder and 1/2 c. shredded cheese in a large bowl until well combined. Add the milk (or beer) until just combined with no dry spots. Spoon the batter into a the prepared pan. Smooth the surface of the dough and sprinkle remaining 1/4 cup of grated cheese on top. Cover with lid and bake for 40 minutes at 375 degrees. Uncover and bake for another 10 minutes. Remove from oven and let cool sit for at least 10 minutes before turning bread out. Serve warm.
