Dig horseradish in early spring or late fall. Cut off tops and replant. Scrub roots. Cut out bad spots. Cut in chunks. Grind with as little water as possible. Reuse horseradish water if grinding a small amount at a time to reserve the flavor. Grind finely. Add ingredients. All quantities are approximate. Add more or less to taste.
