Dissolve yeast in 1 tablespoon sugar and 1/2 cup of milk. In mixing bowl, sift flour, salt and sugar. Add eggs and yeast mixture and butter. Knead well until dough is smooth. Set aside 2 1/2 hours to rise. Turn out on lightly floured board and let rest for 1/2 hour. Divide dough into 4 equal parts. Roll out 1/2-inch thick. Cut into squares; fill with nut, poppy seed, prune or apricot filling. Gather up two corners carefully, folding one over the other. Pinch together. Bake at 375° until brown.
