Heat the olive oil in a saute pan. When hot, add the garlic and onions. Continue cooking over medium to low heat for 10 minutes. Add 1 to 2 tablespoons of water if the onions begin to stick. Add the chopped spinach, cover, and continue to cook for 5 minutes. Remove the lid, and add chopped tomatoes, beans and thyme. Heat through. Serve plain or as a topping for crostini. Makes 6 servings.
